In the busy mornings, having easy and healthy food to eat in the mornings can make the difference between a mediocre day and a terrific day. One of my favorite morning snacks is muffins. The potassium in the bananas and the antioxidants in blueberries make a great AM punch. These are simple and easy mixes to make and only require eggs, milk and oil, while making 12 muffins per box. Each mix includes a Seven-Whole-Grain Gluten-Free Flour Blend that includes the following grains: Whole-Grain Brown Rice Flour, Whole-Grain Millet Flour, Whole-Grain Buckwheat Flour, Tapioca Flour, Whole-Grain Oat Flour Garbanzo & Fava Bean Flour, Whole-Grain Sorghum Flour, and Whole-Grain Teff Flour.
